Zucchini pizza crust


Remember me?  Yeah, I pretty much went off the grid for awhile there!  Life was swallowed up in preparations for celebrating my son’s wedding, which was held last week.  It was a beautiful day, and I inherited a wonderful new daughter-in-law!

Now that the dust has settled, I’m trying to catch up on things around the house, including what to do with the tasty abundance from our CSA box.  The zucchinis are starting to pile up here, so I decided to find a new way to use them.  None of my previous zucchini recipes have wowed the family, but I might have stumbled onto something today.

I found a base recipe for a healthy zucchini pizza crust and experimented from there.  The crust was less soggy and help together better with the addition of the bread crumbs, but it tastes just as delicious without them.  I regret that the picture was taken after the toppings were added and baked, but at least you can see that it really works.  Better yet, it tastes delicious and is good for you!

My plan is to make up as many of the crusts as I can with my current supply of zucchini, then freeze them.  I’m also considering substituting cheddar cheese for the mozzarella just for kicks and giggles.  I’ll have to let you know how that works out!

Zucchini Pizza Crust

4 cups zucchini, shredded
2 cloves garlic, crushed
1/2 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1 egg
1 teaspoon Italian seasoning
Salt & pepper to taste
1/4 cup bread crumbs (optional)

Preheat the oven to 450 degrees. If using a pizza stone, place the stone in the oven. Microwave the zucchini on high for 6 minutes. Let cool, then place inside paper towels and squeeze out as much moisture as you can. In a large bowl, mix the zucchini, garlic, mozzarella, parmesan, egg, Italian seasoning, salt and pepper. Lay a piece of parchment paper on the counter, and press the mixture to out in a round shape, about 3/4 inch thick. You will have about a medium sized crust that will feed 2-4 people. Lay the parchment on the pizza stone or a baking sheet, and bake for 15 minutes. Remove the crust from the oven. Spread with pizza sauce and other toppings of your choice, sprinkle with cheese, and bake for 10 minutes.
